Keeping beans fresh

Light, air, heat and moisture gradually change coffee aroma. Keep beans in a tightly closed opaque container in a cool, dry cupboard, away from the stove. Buy small amounts and grind only what you need for one brew. Note when you open a bag and compare how the flavour develops.
