Coffee Notes
Short notes on brewing and storing coffee. Try small adjustments and find the cup you enjoy.
Start with coarsely ground coffee and fresh water. Try 15 grams of coffee for 250 millilitres of water, then adjust to taste. Pour in hot water, stir gently and steep for about four minutes. Lower the plunger slowly. Decant the drink so the grounds do not continue brewing in the pot.
Rinse the paper filter with hot water to warm the brewer. Add medium-ground coffee. Wet the grounds with a small pour and pause for half a minute. Continue in small circles with a steady flow. If the cup is too bitter, try a slightly coarser grind. If it tastes thin, try a little finer.
Light, air, heat and moisture gradually change coffee aroma. Keep beans in a tightly closed opaque container in a cool, dry cupboard, away from the stove. Buy small amounts and grind only what you need for one brew. Note when you open a bag and compare how the flavour develops.
